Really grateful for the post, a lot of great information. I have a couple questions. So I buy the farmed salmon at Aldi, and I make gravlox with it, have been for years. If I am ok with making gravlox with it, would it then be ok for sushi/raw consumption just like how people use the salmon from Costco for similar uses?

Hi William, I'm glad to hear this was helpful! With salmon, the big question for raw use is whether the fish was properly frozen for parasite control and handled cold and clean the whole way. This includes using different boards and knives for the salmon vs other first they're handling.

So if im safe to use it for gravlox, would you say its safe for raw consumption too?

The risk profile of eating gravlox is not all that different from just eating the salmon raw as there isn't enough salt in it to destroy parasites or bacteria. As for Aldi, I don't know them so I can't say whether they exercise safe handling practices or not.

Glad to hear this was helpful! Yea with the acid it's understandable why you'd think it's doing something as the protein does denature, making it look "cooked". But the hydrochloric acid in your stomach isn't enough to kill parasites/bacteria so a little lime juice isn't gonna do it either.
