The Mold That Built Japanese Cuisine
It's hiding in almost every Japanese ingredient you own. Once you know what it is, you'll never see your pantry the same way.
A glistening slice of ootoro gets dipped in inky sashimi shoyu. Steam curls off a bowl of miso soup on a cold morning. Juicy teriyaki chicken catches the light with a sticky, lacquered sheen, and at the end of a long day, the first sip of chilled sake spreads its cool warmth through you, washing away the stresses of the day. Each experience is unique, yet every one of them was made possible by the same living organism. It’s not a plant, an animal, or a bacterium... It’s a mold.
Don’t worry, it’s not the kind of mold that grows rampant on leftovers you’ve forgotten about in the fridge. Think of it more like a precision tool, a lockpick that slips inside an ingredient and frees the textures and flavors locked away in it. It can transform starches into sugar, make tough meat tender, and it can even turn protein into umami. If that sounds like magic, that’s because it basically is.
Its scientific name is Aspergillus oryzae, but here in Japan we just call it koji (麹). It’s a filamentous fungus that sends out impossibly fine white threads lacing through whatever they touch. As they spread, they feed, taking the ingredient apart from the inside and leaving it richer than they found it. Put simply, koji is the invisible thread running through Japanese cuisine, transforming humble ingredients into the flavors that make it unmistakably Japanese.
It starts out simply with a cooked substrate such as steamed rice, barley, or boiled soybeans. Koji spores are sprinkled over the top, and from there it’s just a matter of keeping things warm and humid for a couple of days. This gives the koji time to bloom into a pristine white fuzz, dusting the rice or beans with what looks like frost, and filling the air with a sweet, nutty smell that’s somewhere between chestnuts and fresh mushrooms.
Unassuming as it looks, that fuzz is a tiny enzyme factory, and it’s only just getting started.
So what’s it actually doing in there? As koji grows, it pumps out enzymes, the molecular tools that break big things down into smaller ones. Two of them do most of the work. Amylase takes the starch in rice (one long chain of sugars), and snips it into simple sugars that taste sweet. Protease does the same to protein, cutting it into its base components, or amino acids. Glutamic acid is one of these amino acids, and you probably know it as glutamate, the compound that gives foods like tomatoes, kelp, and cheese their rich umami.
If all this sounds a bit like digestion, that’s because it is. Koji releases enzymes into its food, breaking starches into sugars and proteins into amino acids, much like your body after you eat.
It may sound simple, but the magic is in all the different possibilities that koji unlocks through its powers of transformation. Grow it on soybeans and roasted wheat, add some brine, wait a year or two before filtering, and you’ve got soy sauce. Pack rice or barley koji with cooked soybeans and salt, and it slowly ripens into miso. Stir it together with steamed rice and water and it ferments into sake; let that sake keep going and it sours into rice vinegar. Mix it with glutinous rice and a shot of distilled alcohol, leave it to mellow, and you get brewed mirin, the naturally sweet, umami-rich beverage behind the glossy glaze on teriyaki and the gentle sweetness in countless simmered dishes and sauces.
None of this is new. These flavors have stocked the Japanese pantry for centuries. A single bowl of ramen can carry half a dozen koji products at once, and even the rice under your sushi was seasoned with it. Like the yeasts behind bread and beer, or the cultures that ripen a good cheese, it’s a microbe that humans have been taming for generations. In Japan, koji is so revered, it was officially dubbed kokkin (国菌), or the “national fungus” in 2006. I can’t think of another cuisine that’s given a microbe a title.
That reverence is well earned. But the most useful part is that these ingredients form a toolkit that can make your cooking taste better, regardless of what you’re making. A spoonful of miso stirred into a pan sauce or a winter stew brings the same savory depth you’d otherwise chase with anchovy or parmesan. A splash of mirin lends a glossy sweetness to a glaze, or pulls a sauce back from too salty or too sharp. A few drops of soy sauce deepen almost anything, from a long-simmered ragù to a plate of scrambled eggs. Think of these ingredients as flavor enhancers that can naturally add salt, sweetness, and umami to any dish, Japanese or not.
But you don’t have to stop at what’s on the shelf. It’s also possible to get koji-inoculated grains you can ferment in your own kitchen to make your own condiments and beverages like shio koji, koji chili sauce, or amazake. No kidding! I had a dish recently with soy sauce, miso, and sake in it. Three ingredients which couldn't exist without koji. Once again, fungus comes in clutch as one of the greatest organisms out there.
